Cheddar, originating from England, was the most commonly produced cheese type in Quebec in the first half of the 20th century. Since 1948, Laiterie Charlevoix has been crafting this iconic cheese. Today, Cheddar accounts for 40% of the company's production. Cheddar is produced every day of the year, except on Christmas and New Year's Day. Whether fresh, in curds, wheel form, or aged, Cheddar draws crowds to the counter from the very beginning. Founded in 1948 by Elmina Fortin and Stanislas Labbé, Laiterie Charlevoix remains a family-owned business to this day. The great-grandchildren of Stanislas and Elmina constitute the fourth generation working in the company. Dedicated originally to dairy product trade in Charlevoix and on the Côte-Nord, the company has adapted over the years to focus on producing fine cheeses and Cheddar. The company now has its own distribution network and shops in several regions of Quebec. Laiterie Charlevoix products are distributed across Canada.
